About Wilderness Brewery

We're a really small family team, making the beers we want to make. We're big fans of the classics, so expect traditional styles from around Europe, but with the occasional modern influence.

Almost all our of beer is aged in oak wine & whisky barrels, where we allow resident wild yeast and bacteria to add sourness & complexity over the course of one to three years.

When we use fruit in our beers, it's generally grown in our own orchard, or hand picked with friends in the surrounding hills. We believe that using local ingredients, along with the specific (wet!) climate in mid Wales, gives our beers a unique sense of place.

While lots of our beers have complex & sour flavour profiles, we strive for a balance of funk and refreshment rather than just face puckering acidity! But be warned, our beers can be fairly tart.

We're very excited to share some of our curated boxes with you - thanks to team Brewser!

With love, James & Helen
