About Vault City Brewing

We’re Vault City, an independent craft brewery and Scotland’s largest sour beer producer. We make heavily fruited, modern sour beers in (sometimes) sunny Portobello, Edinburgh.

We certainly don’t take ourselves too seriously, but we are serious about beer. For us, that means bright colours, bold new flavours, and a production team that aren’t afraid of a challenge. Alongside our core range of Strawberry Sundae and Cloudy Lemonade, we release at least 3 new beers every 2-3 weeks. These limited releases are rarely brewed twice - so once they’re gone, they’re gone.

We like to brew something for everyone, and we categorise our beers from sessions to mid and high vaultage sours. That means we have something sessionable around 4%, all the way up to our imperial sours at 12%.

We set out to modernise a traditional style of brewing with our take on fruited sours. Our modern sour beers have converted even the most stubborn non-beer and traditional beer drinkers, with a mix of accessible and adventurous flavours. So, crack open a can and tell us what you think!
