Still is a single-barrel bottling of three year old beer, brewed in April 2020.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe wort was made from a turbid mash using Maris Otter, toasted amber malt and oats, to give a rich silky body. The wort underwent an extended boil with large quantities of aged hops, before being held for two nights in our coolship for a double innoculation.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe resulting spontaneous fermentation took place in a single 350 litre barrel, and was left to mature for three years. The resulting beer was bottled still, without carbonation, and given four months in bottle to rest before release.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe finished beer displays an elegant balance of acidity, oak tannin and hop bitterness.
